This recipe was shared as part of the Boundary Way Project’s ‘Postcards from the Plot’ project in 2020. It was a creative project that explored the meaning and importance of allotments in the present day through online activities, workshops and inspiring stories from growers in Wolverhampton and beyond. The idea behind the project was to forge creative, personal and natural connections in a time of social distancing. In this resource Kanj Nicholas shares one of her favourite Sri Lankan recipes prepared with fresh courgettes and spinach from her allotment.
