As Spring approaches we are sharing the final films in our Winter Wonder series, exploring nature connection, creativity and wellbeing through the cold months. Today we have a closer look at a warming film by artist and cook Kanj Nicholas as she guides us through her Sambar recipe full of spices and flavour. A Sambar is a vegetable stew with its basis in lentils and we can’t wait to try this delicious Winter recipe for ourselves.
This wonderful recipe involves creating each separate part of the dish before melding them all together in one pan to create the finished Sambar. The elements include home-made toor dhal, spices, cooked vegetables, seasoning and water. The flavours from these steps combined come together through simmering to produce a warming stew perfect for the Winter months, which can be served on its own or with rice, or your choice of side dish.
As part of our last project, Postcards from the Plot, Kanj produced another recipe film that you all loved. In this film she shared one of her favourite Sri Lankan recipes prepared with fresh courgettes and spinach from her allotment. This Dhal went down a storm and we hope that you enjoy Kanj’s latest recipe just as much.
